*Ingredients*

2 Flour Tortillas

1 Thinly Sliced Tomato

1 Thinly Sliced Cucumber

Ham Slices

Swiss Cheese Slices

Berry Cream Cheese Spread

Start with a Tortilla.

Spread on Cream Cheese.

Add second Tortilla.

Again spread with Cream Cheese.

Cover one Tortilla with sliced Cucumber.

Cover Cucumbers with sliced Tomatoes.

Add two slices Swiss Cheese.

Layer on Ham Slices (I like 2-3 layers depending on how thin the slices are).

Roll up Ham side first.

Cut into 1 1/2 to 2 inch pieces.

Who is Smarter You or Your Mom?

This morning, while I was desperately trying to avoid getting up and starting my day, the radio topic was about how Google has made my generation dumb. We don’t need to commit facts to memory because we can just search it. So in a one on one with someone older they would know more about – insert topic here. Depending on the topic I am sure this would work but really is it Google’s fault? I am the type that if I am not using it everyday I lose it. So take ancient roman history. How often do you think that topic comes up in day-to-day dealings? Even something simple we learned in school like how long my entrails are. Honestly if I’m not a Doctor and using that knowledge everyday, do I really need that little tidbit of information?

So back the original question. “Who is smarter me or my mom?” I will concede when it comes to all the stuff I was supposed to commit to memory in grades K-12 my mom will outsmart me any day. However, she is from the “we don’t do technology” generation. Who doesn’t use some type of technology every day? Because I use it every day I know it, or will be able to learn it quickly. Unlike my mother who take hours just to login to her facebook account. “How do I find my password again?” “You are supposed to have it memorized Mom.”

Dinner made Simple

I’m all about the simple at the moment. This meal took about 45 minutes, start to finish.

Ingredients:

  • long grain white rice
  • frozen mixed vegetables
  • canned chicken chunks
  • cream of chicken
  • shredded cheese

To start I put about two cup uncooked rice in my rice cooker. On the quick-setting it takes between 10-15 minutes. In the mean time I pull out the rest of the ingredients. I use one 12.5 oz can chicken, drain the excess water but don’t squeeze it out like you would tuna. If your family likes a lot of meat just put in another can. I use two 10 oz cans cream of chicken. I buy bulk frozen mixed vegetables so for this I just eyeball an amount that looks good. I mix those three ingredients in a glass casserole dish and wait for the rice. Preheat the oven to 400. When the rice is done I mix it in (not always using it all) again I just eyeball what looks about right, and cover it all with the cheese. I put it in the oven uncovered for about 30 minutes. Long enough for the vegetables to cook and the cheese on top to melt. I like to put it on broil for a minute or to just to add a little browning to the cheese.

Pull it out of the oven,  set it on the table, salt and pepper shakers on the side, and ta-da Dinner made Simple. This feeds my small family of four just fine.
