Dinner made Simple

I’m all about the simple at the moment. This meal took about 45 minutes, start to finish.

Ingredients:

  • long grain white rice
  • frozen mixed vegetables
  • canned chicken chunks
  • cream of chicken
  • shredded cheese

To start I put about two cup uncooked rice in my rice cooker. On the quick-setting it takes between 10-15 minutes. In the mean time I pull out the rest of the ingredients. I use one 12.5 oz can chicken, drain the excess water but don’t squeeze it out like you would tuna. If your family likes a lot of meat just put in another can. I use two 10 oz cans cream of chicken. I buy bulk frozen mixed vegetables so for this I just eyeball an amount that looks good. I mix those three ingredients in a glass casserole dish and wait for the rice. Preheat the oven to 400. When the rice is done I mix it in (not always using it all) again I just eyeball what looks about right, and cover it all with the cheese. I put it in the oven uncovered for about 30 minutes. Long enough for the vegetables to cook and the cheese on top to melt. I like to put it on broil for a minute or to just to add a little browning to the cheese.

Pull it out of the oven,  set it on the table, salt and pepper shakers on the side, and ta-da Dinner made Simple. This feeds my small family of four just fine.
