Ham Florentine Wreath

Left over Christmas ham recipe

I am always looking for good recipes to use my leftover holiday food with. This year I tried the Ham Florentine Wreath. It turned out so beautiful I had to take a picture and post it.

I got the recipe out of an old Pampered Chef cook book.

2 packages (8 oz ea) refrigerated crescent rolls – I used three

1 package (10 oz) frozen, chopped spinach, thawed and well drained – I used a 16 oz package

1 1/2 cups diced cook ham – I chopped up leftover honey glazed ham and used about 2 1/2 cups maybe a little more

1/4 cup green onions with tops, thinly sliced – I don’t like onion, so I don’t use them.

1/4 cup mayonnaise

1 1/4 cups (5 oz) shredded Swiss cheese – I buy preshredded packages, cuts back on time

1/4 teaspoon coarsely ground black pepper

2 plum tomatoes, sliced

1 egg white, lightly beaten

1/4 cup sliced natural almonds, chopped – I never have them at the house

preheat oven 375o

  1. Combine spinach, ham and green onions in large bowl.
    • add 1 cup cheese
    • mayonnaise
    • black pepper
    • mix well
  2. Unroll crescent dough; separating into precut triangles. With wide end in center arrange in a circle on large round stone or round pizza pan (triangle points will  extend over pan edge) Press base of triangles together to form slightly scooped area for mixture.
  3. Scoop mixture onto circle, filling crescent dough.
  4. Arrange sliced tomatoes overlapping on top of mixture.
  5. sprinkle remaining cheese on top of the tomatoes.
  6. Pull triangle points over filling tucking under triangle base. I had one extra crescent triangle so I filled it, rolled it, and placed it in the center of the wreath. Brush egg whites over wreath to create glaze. Sprinkle nuts on top.
  7. Bake 25-30 minutes or until golden brown.

I don’t know how my parents did it. We were a fairly poor family so Christmas presents were usually clothes or necessities. Maybe a few toys (nothing extravagant), stockings were nuts and fruits, maybe some trail mix. Some how Christmas was always magical. I remember waking up early and getting my sisters to help me “explore” the house Christmas morning. We knew not to open presents until everyone else was up so we just sat on the couch, maybe make pancakes. It was always like walking into a dream world. The living room deked out in lights and the tree full of exciting new things waiting for us. I remember there was always this hushed quality in the air. Something I have never been able to recreate for my family.

Building up to Christmas we baked and caroled and wrapped. And we did The 12 days of Christmas. I think when I look back this is what stands out the most. This is what Christmas was about.

We called ourselves the Midnight Ennead because we usually came around midnight and we were a family of nine. We would show up, ring the bell, and leave a poem with a gift. We started on the thirteenth of December and went each night until Christmas eve. Gifts were almost always homemade and the family we visited almost always needing some Christmas cheer. What we gave every year changed. The ribbon stars were a staple as was the cookie Christmas tree. One year we carved soap to look like holiday things. Purchased items changed based on what we could afford that year. We all took turns setting it on the door step and running away. The time we showed up was based on how old the child was and when they needed to be asleep so we were never caught, except once. An over cautious family had called the cops on us and they were waiting for us the next evening. That year we just gave them everything at once and let them know who we were so they could still enjoy the gifts we made.

German Pancakes

Quick Easy Breakfast

5-10 min. prep time

25 min. baking time

preheat oven 350o

Ingredients

  • 8 Eggs
  • 1 cup All purpose Flour
  • 1 cup Milk
  • 1/2 cup Butter

Place butter in 9×11 baking dish. Put in oven during preheating to let butter melt.

In mixing bowl add

Beat together and add to melted butter in baking dish

Do not mix. Place in oven for 25 min.

Remove from oven and immediately sprinkle with powdered sugar. My kids also like adding pancake syrup but I let them do that individually.

Variations

I like to make a half batch at the same time and add additional ingredients. In this case ham and cheese. What ever you enjoy in your omelets will be good. Cooking time is the same but use a smaller dish.
